- 1 c shortening
- ½ c brown sugar
- 1 egg
- 1 T water
- 2 c raw grated carrots
- 1 ½ c flour
- ½ t baking soda
- 1 t baking powder
- ½ t nutmeg
- ½ t salt
- ½ t cinnamon
Cream shortening and brown sugar together.
Add the egg, water and carrots.
Add all remaining ingredients and mix thoroughly.
Pour the mixture into a greased ring mold and set in the refrigerator overnight.
Remove from refrigerator ½ hour before baking.
Bake at 350 for 35 minutes and turn out of the ring mold onto decorative plate to serve.
